Smart, Sexy, Sweet: Chocolate Chip Cookies (free of gluten, dairy, soy, corn, nuts, refined sugar)

There is nothing like a warm chocolate chip cookie right out of the oven. But if you can’t eat gluten, dairy or eggs it can be challenging to find a good recipe that meets all your needs. Until now!

 My only warning; try not to make up for all of those years you were missing them because you couldn’t eat gluten or eggs or dairy in one sitting!

Chocolate Chip Cookies

(free of gluten, dairy, eggs, soy, & refined sugar)
Makes: approximately 24-34 (depending on the size of cookies)

Dry Ingredients:
2 ¾ cups Bob’s All-Purpose Gluten Free Flour
1 ½ cups coconut sugar
1 teaspoon baking soda
1 ½ teaspoons xanthan gum
1 teaspoon sea salt

Wet Ingredients
1 cup refined coconut oil, melted
6 tablespoons unsweetened applesauce
2 tablespoons vanilla extract
1 cup Enjoy Life Brand chocolate chips

(NOTE: These cookies are fluffy, so if you’d like a flatter cookie, reduce the amount of flour by 3/4 cup and add in 1/4 cup flax meal.)

Preheat oven to 350 ºF. Line two baking sheet trays with parchment paper. In a medium bowl, sift together the dry ingredients. In a separate bowl, mix together the wet ingredients. Add the dry ingredients to the wet mixture and stir until a dough is formed.

Gently fold in the chocolate chips until they are evenly distributed throughout the dough. Drop dough onto the baking sheets either by a cookie scooper or by rounded tablespoonful, about an inch apart.

Bake the cookies for approximately 9-12 minutes rotating the sheets 180 degrees after 7 minutes. The finished cookies will be set in the middle when they are done. Let cool on baking sheet for 2 minutes, then transfer to a wire rack to cool.
