It’s already getting to be summertime… and in my house, that means it’s salad time. No stove or oven to make that hot house any hotter, and you end up with this delicious & nutritious dinner. As an added bonus, it only takes ten or fifteen minutes to prepare!

Strawberry-Watermelon Caprese Salad


Spinach (shredded)

Watermelon (roughly chopped unless you have a melon baller to make it prettier)

Mozzarella (torn or sliced)

Strawberries (halved)

Basil Leaves

Balsamic Dressing

Balsamic Vinegar

Olive Oil

1 tbsp Salt & Pepper

2 cloves of chopped garlic

1 tbsp brown sugar (if you want the extra sweetness; if you’re using a high quality balsamic, then you could skip the sugar!)

Putting all the dressing ingredients into a jar with a lid makes mixing it so much easier. I personally used ¾ cup balsamic vinegar to ½ cup olive oil. I really enjoy the bite of the vinegar, but ½ cup of each would also make a nice dressing. Having a little more vinegar combats the sweetness of the watermelon and strawberries. And after everything is prepped, you just toss it all together in a bowl. Bon App! 🙂

I literally cannot get enough of this salad. I’m probably going to eat this often this summer, with watermelons and strawberries being so plentiful. I paired with spicy chicken drumsticks, but adding chicken to the salad itself would’ve been great too.
